Potato Croquettes

Yesterday night, I tried making potato croquettes. Was my first attempt and it was a success! ehehe
I first tried it as a Tapas dish at a Spanish restaurant. For those who don't know what croquettes is, according to wikipedia:

A croquette is a small fried food roll containing usually as main ingredients mashed potatoes, and/or minced meat (veal, beef, chicken, or turkey), shellfish, fish, vegetables, and soaked white bread, egg, onion, spices and herbs, wine, milk, or any of the combination thereof, sometimes with a filling, often encased in breadcrumbs.

I did a potato & carrot filling. It's real easy to make actually. I googled for a recipe ;)

Ingredients

  • 400 g potatoes
  • 1/8 litre of milk
  • 10 g butter
  • a pinch of salt
  • grated nutmeg
  • one eggyolk
  • 150 g flour

for the breading

  • 1 egg
  • breadcrumbs
Method

1. Boil potato & carrot until soft. Then leave it for few minutes, but don't let them cool down. We only want excess water to evaporate.

2. Get your potato masher out. Add the salt, nutmeg and butter to the potatoes and start mashing. Slowly add milk and keep mashing the mixture until is is very smooth and creamy - and not too liquid! You want a fairly stiff potato mash.

3. Now add the egg yolk and keep mashing ... the mixture will turn sticky now, so slowly add the flour until the mixture is again firm and only slightly sticky.

4. Now form either balls or rolls of the mixture (that's entirely up to your personal taste) and put them on a wooden board. Let them sit in the fridge for half an hour.
* ( I just leave the whole mixture in fridge for few hours - the longer the better as it holds the mixture better & i didn't form the mixture beforehand, i did it after)

5. Pre-heat your deep fat frier. Now form your croquettes into whatever shape you want then first coat it in a whisked egg and then in the breadcrumbs. Then into the fryer for 2-3 mins.

8IGHT




It's 8 months of bliss (with occasional bitterness, of course ;P )
It's the longest time I've spent time with my husband. We've dated for 9 years & being apart from each other from ipoh-muar to perth-gold coast.

Happy 8th month sayang! I hope we'll have 80 more years or more together forever ;)

Melbourne

I've been in Melbourne for 6 months already! Time flies so fast. I have yet to tell my life here in Melbourne, so this posting will be about my life in Melbourne. Since Melb is so new to me, I had to get familiar with Melb. The first month I was here, I was so clueless to where I was all the time. Took me few months to memorize the street names and the tram number that I need to know hehehe.
BUT when it comes to shopping, I know where the shop is and how to get there! hahaha

The place I'm staying right now is at St. Kilda. St Kilda beach is just steps away from my place, not that I like beaches ehehe. You can take tram number 96 or 16 from the city to St Kilda, it's about 20-30 mins ride. What is St Kilda famous for? You can read it here.

Let's move on to the Melb CBD, where the actions or rather shopping takes place ;)
Melbourne is full with Victorian style architecture and also melb is an artsy place. Ppl appreciate art here i think. Anyways, read here for more info on Melb CBD. I'm still learning about this place.

To travel around Melb, tram is the easiet transport. Purchase your tickets at any 7-11 outlets or convenience store or inside the tram. Don't get caught or else you have to pay $100 fine (my husband got caught once & he hated the tram police since then hahaha )

Balik Kampung Trip to Gold Coast

It's been 6 months since we saw my husband's family, so we decided to go home on 21st April until 27 April. A good whole week to get to know them better and most importantly to eat good food (oppss patutnya to learn how to cook and get all the secret recipes from mama ;D ). Nevertheless, I copied a lot of recipes and learned how to cook! ehehe I have to admit after returning from GC, I've been a better cook (tak caya tanya suami saya ;)

My last visit to GC was in 2006 i think with my sister. So after 4 years, I returned with a short list of my favourite things in GC.

Numero Uno is COPENHAGEN ICE CREAM. It's at surfers paradise, if u so happen to be there..it's a must try! My favourite flavour is vanilla choc chip!! yeahooo!!!



Second place goes to Pop n go - popcorn shop. It's at pacific fair. Loved it so much that I had to 'tapau' the popcorn back to melbourne. My fav is creamy creamy caramel. sedap gila! kat sini popcorn semua jenis masin urgghhhh

Third & fourth is bubble tea. There's no good bubble tea in melb. I miss Utopia in Perth!
and Icey Ice, ice shaved dessert, not as good as Perth's.

Since I've been to all the theme parks years ago and did all the visitor must do things, i skipped all that on this visit. BUT one thing that I've always enjoyed in gc is playing MINIGOLF! Everytime I'm in gc, i always insisted in playing minigolf. i'm pretty good i must say hahaha

대한민국!!! South Korea!!

Only 20 more day to World Cup 2010!! Can't wait for it, the good football, the dramas, the shoutings, the good looking playerss...aaaahhh ehehe. This year I'll be supporting South Korea, we need to support Asian countries yeah!!! ehehhe

anyway, i love this song 승리의 함성 (The Shouts Of Reds Part 2), by Big Bang feat. Kim YuNa (the world no 1 figure skater, she won gold in Winter Olympics) . I love the song and everyone should watch the video on youtube (English subs, of course). Come sing along with me!! Dae Han minkuk hwaiting!!!

Alamak dah 2010!!

It's been soooooooo long overdue. My last post was in November 2009!!! It's been 6 months already ehehhe. I was sooo lazy to update my blog, conveniently forgotten my blog..i know my bad. Not that there's anyone reading my blog ehehhe

Anyways, since it's almost half way of 2010, I think I should be more rajin to update my blog. I'm still the same old me, nothing much happened. I've gotten my temporary PR in February (only took me 1 1/2 months to get it), went home to Ipoh to pack my whole life in a 25kg bag!
Celebrated CNY by stuffing all chinese food into my tummy! Was sick for almost 2 weeks!! aarrggghhh and since coming back to Melb, I've been sick and sicker. Went to see the doctor and did blood test and abdominal scan!! aiyoooo

Had the chance to play netball again, played for MASCA games. We got 2nd place!!! A great result despite having just 3 times training! Really proud of all the makcik's ehehhe. and i fell on my butt on the first day of training. my right wrist and knee is hurting until now, double aiyoooo~

We went back to Gold Coast since my mama in law always ask when we're coming home. it's been 6 months since we saw the family. So when Jetstar decided to have the Gold Coast sale, we went home! Every single day was a bliss. the food was really good, the adiks in law was fun, and I got to eat my 4 years wait popcorn & Copenhagen ice cream!!! not having to cook everyday was a bonus too ;)

I shall update all the pictures to sum up the last 6 months on my next posts (if i have the time ;p)

p/s: It's winter next month, I love winter! ;)
